Healthy Fish '& Chips

Looking for a nice easy mid week healthy dinner ?

This has become one my most favourite meals. Its so easy and sooo tasty ! 

What you need:
White fish (we use cod or haddock)
Olive Oil
Potatoes
Garlic
Rosemary
Breadcrumbs (we use Waitrose with lemon & pepper)
(Lemon if not already in the breadcrumbs)

You will need to do the chips first so cut out your chips from the potatoes, you can leave the skin if you like. Pop them in a dish with a table spoon of olive oil, a couple of bashed garlic cloves and a few sprigs of rosemary. Keep checking on them and give them a toss in the oil every now and again.

Pop in the over for about 45 min - 1 hour, until they are golden and crisp.

Pop the fish in a dish and rub a little olive oil in to the fish and sprinkle with the breadcrumbs. Pop in to the oven for about 15 - 20 minutes until the fish is all cooked through. 

Cook your peas however you wish and serve :) Enjoy ! This dish is only about 360 cals so it's a perfect treat when you are trying to be good! :)
