Lemon Meringue Pie Fudge - Take Two

So, as mentioned and some of you may have seen on my Facebook page - I tried the lemon meringue pie fudge again !

Again, tweaking the Iced Jems recipe and using the ingredients listed below (plus yellow food colouring)
 
  • 450g white Sugar
  • 110g Unsalted Butter
  • 125ml Milk (I used Semi-Skimmed)
  • 1 Tsp Vanilla Essence
  • 400g Icing Sugar (Powdered Sugar)
  • Meringues, marshmallows, yellow food colouring & lemon flavouring.


 

So I followed Jemmas instructions and then split the mixture in two. The only difference I made was I swapped the brown sugar, for white caster sugar. 

In the first half I melted 50g of white chocolate and mixed this in. Then took a meringue nest, popped it in a food bag and whacked it with a rolling pin in to little pieces and mixed this in. 


Then popped this in the lined baking dish. 

Then, in the second half, I added a tiny drop of yellow food colouring, about 1.5tsp of lemon essence and some mini marshmallows. (I picked out the white ones)


Then pour this on top of the other layer and smooth out with your spatula. 

I then melted another little bit of white chocolate, and just using a tea spoon, flick the chocolate over the top...


Then top with more mini marshmallows and white chocolate stars. (or decorate as you wish)


Leave to cool in the fridge for a couple of hours or overnight.

Serve on a lovely cake stand...


Or package up and give away as lovely gifts. 


I will just add, I think this is YUMMY, but it did turn out a bit more like tablet, quite surgery instead of real creamy fudge. But it's so light and melts in the mouth ! I hope you enjoy and do let me know if you try it yourselves !

  1. I normally make my fudge with a tin of condensed milk , 150ml of semi skimmed milk, 450g white caster sugar and 115g butter. Comes out really nice soft. Maybe too soft.

    I'm certainly going to give this a try when I can get supplies from the shops!
