OOh these were scrummy !!!
I used a good old fashion cake baking ingredient trick for these, I weighed 2 eggs and added the same amount of butter, self raising flour and caster sugar. I then added a heaped tablespoon of cocoa powder.
Bake the mixture for about 15 - 20 minutes, or until they are firm to the touch, but not burnt, keep an eye on them !!
Then for the frosting I made mint green buttercream !!
Mix 140g butter & 280g sifted icing sugar together with a little bit of food colouring and 1 tsp of peppermint essence. Always try this for flavour and add a bit more if you wish !!
Then, using a large circular nozzle, pipe the icing on to the cupcakes !
I finished mine off with sprinklings of mint aero or as you can see, a couple of squares as it comes ! (I think this might've worked better with the old shape bars though, these look a little like boobs sorry ! ) ha ha !
