Healthy Eating Tips - 1

So my first week has been amazing being healthy, I say this because I have felt so so good, so quickly. It just shows that all the rubbish I was eating was really not liking me at all !

So I thought I would just share a couple of things that have helped me:

Fitness Pal App




A couple of ladies on IG recommended it to me and having used it in the past, I knew it was worth a go ! Especially now I go to the gym and I can add those workouts in!

I was hesitant at first, but there is a 'Recipe' section where you can make up your own items like smoothies and then if you have the same one again, it's nice and quick and easy to add them again ! Go check it out if you haven't already !

Cheat Day


I had a belated Mothers Day celebration where we took my Mum for afternoon tea and I was not going to miss out !! Luckily they were small bites, but it still knocked me wayyyy over my daily allowance, but I didn't care !! Don't worry about these things !

This was the Exclusive Cake Shop & Vintage Tearooms in Midhurst if anyone is ever in the area - it's GORGEOUS.

The Body Book - Cameron Diaz


I saw some great reviews for this book and I just had to have it. I have only ready the first part so I cant comment yet on the whole book, but from about 30 minutes of reading one night, I feel totally different about the way I eat. She talks about the science behind eating and just makes it sooo clear and easy to understand it really is amazing ! I highly recommend it and you can buy it here. (P. S Cameron has cheat days too - so it's OK!)

So these are just a few of the things that have helped me this week, I will share more if it helps and by the way....I lost 2lbs !! Wooo !

Starting again


OK, so I am a chocoholic. There I said it.

Not just someone that loves chocolate, but I have an actual addiction. OK it's maybe not that bad, but it does feel like it sometimes.

I LOVE baking and making sweet treats but I also understand I can't eat like that all the time. I try to be as healthy as I can. That's why there is a 'Healthy' section on my blog too as it's something I am really trying to make a part of my life!
'Starting again' is something I have done wayyyy too many times in my life, but here I am again.

Yesterday I went to the gym in the morning (I have just joined my local one) BUT there is no point if I still eat lots of chocolate. Anyone who follows me on Instagram may have seen the 20 crème eggs we have. I LOVE crème eggs. But they don't love me. I think I put on about a pound as soon as I eat one. I definitely don't have a fast metabolism so thank goodness the season is coming to an end and I will no longer be able to pop round to the shop for one !
So, maybe I should fill you in - I am not happy with my weight or my health at the moment, you may have gathered from my Instagram if you follow me there that I try, but I often slip up.


It's hard. Like reaaalllly hard so I have SO much admiration for those super fitties out there who are super dedicated and you know what - they are the ones that get results.

So maybe it's not OK?.... but it has to be OK, because you can't beat yourself up about it - you are only human - and you can try again tomorrow right !!

Also it takes time to re train your brain in to a whole new way of thinking. I would love to be super fit and healthy and only eat organic and use paraben free skin care all the time, but things take time to research and prepare for and until you really get a wake up call and decide you want to do something about it, it's OK to slip up - a little, not a lot mind, and get back on track as soon as you can !

I think daily inspiration is a HUGE help here, so I follow fitness people on IG and get advice, research ingredients and find out what they mean to my health, sometimes keep a food diary, anything that helps !
I really felt sooo ill last night and heavy and gross that I had to be better today ! And you know what - I have been so far !! It's SUCH a great feeling and I know it's only a day - but one step at a time !

Chocolate Easter Lolly


I had this idea when I was making my Easter Chocolates the other day as they are essentially decorated the same - but this one is an awesome huge chocolate lolly ! What's not to love about that !

And they are so easy to make, you don't need any moulds !

What you'll need:

White chocolate
Milk chocolate
Decoration of choice (I used mini eggs, crème eggs and gold glitter again)
Cake pop or lolly sticks & toothpick.

Melt the white chocolate. Being sure to temper if you are giving as gifts, I only say this because if they are just for you or the kids and they will get eaten pretty quick, there's no need to bother.

Once the white chocolate is melted pour it slowly on to some baking paper and let it 'spread' into a circle which it will do naturally if you pour straight down in the middle.

Pop in the lolly stick and drizzle a tiny bit more over the exposed stick to cover it and keep it in place.


Then drizzle the melted milk chocolate like before, again don't worry - this will look way prettier in a minute!



Take a tooth pick and 'swirl' the milk chocolate around in the white chocolate to get that pretty swirl effect.

Top the lolly with your Easter sweets and pop in the fridge to set (or the freezer for 5 mins if you cant wait!)

There you have it - an Easter Chocolate Lolly. Delicious ! x



This didn't last long enough to be a gift but you could wrap with cellophane and tie with ribbon to give as Easter gifts or have them out on your Easter dessert table !

Easter Chocolates

One of the things to do on my Spring Bucket List is to make Easter Treats.

So here are my Easter 'bark' chocolates.

They are so easy to make and look and TASTE gorgeous.

What you will need:

Easter Cutters
White Chocolate
Milk Chocolate
Mini Eggs
Crème Eggs
Gold Glitter (or toppings of your choice)
Toothpick.

So start by popping the cutters on a tray with some baking paper and pop them in the freezer for 5 - 10 minutes. This just helps solidify the chocolate quicker and keeps it in place.

Melt the two chocolates, making sure to temper them if you want to give them as gifts.  Then fill the cutters with the white chocolate, I just poured it in slowly and then using the back of a spoon 'smoothed' it gently up to the edges of the cutter and for the chick - in to the beak and feet!


Then with a teaspoon drizzle a small amount of milk chocolate over the egg like below, don't be alarmed, it doesn't look like this when it's finished.



Using a toothpick, 'swirl' the milk chocolate in to the white chocolate and you will get this gorgeous effect:



Amazing hey ! Much better !

Then top your chocolates with mini eggs, pieces of crème eggs and for extra sparkle - some gold glitter !



Pop them in the freezer to set for 5 - 10 minutes and then slowly 'pop' them out of the cutters. I kind of pulled the edges away from the chocolate and this helped release them.



How cute do they look ? And trust me, these are delicious !

I am going to bag them up in cellophane and give them as gifts!  I absolutely love these, they are so cute and really so simple to make ! I hope you enjoy ! Keep them in the fridge to keep them at their best !

Mini Creme Egg Nests


So, when I was making my giant Mini Egg Nest the other day I suddenly wondered whether you could melt crème eggs and use these instead of regular chocolate ?

You can.

You have to be really careful though and melt them super slowly. They also don't melt as thinly as chocolate and once it's melted it kind of clumps together. Sorry I didn't get a picture I was concentrating too hard not to burn them !

What you will need:

Makes 36.
6 crème eggs
Mini cupcake cases
Mini Eggs


Melt the crème eggs slowly, then add the crumbled shredded wheat to the mixture and mix it all together.


I used these gorgeous little Easter coloured baking cases - you can get similar ones from Iced Jems. 

Pop a teaspoon of mixture in to the case and pop a mini egg in the middle of the mixture.




These are super cute and soooo tasty ! They taste just like cream eggs. They are chewier than normal which I kinda love. You can see the texture of them below:


Perfect for your Easter Celebrations, making with the children or just to devour yourself (like I may have done)!

Giant Mini Egg Nest



So every Easter we make Mini Egg nests. But this year I thought I would make it more of a centre piece and make a giant one.

Kind of like the size of an actual nest ! I love it so much !

This is the perfect Easter make to do with the Children, it's so easy! Happy holidays to those who are now on their Easter break!

This is what you'll need if you want to make one yourself:

1 large bar milk Chocolate
1 Small bar white chocolate
Shredded Wheat ( 4 pieces )
Mini Eggs - share bag.
Mould (or can do by hand - the children will love this)

Start by melting the milk chocolate.


I wanted to try and get a marble effect on the top so I melted the white chocolate and drizzled it in to the inside of the mould first.



Mix the crumbled shredded wheat in with the melted chocolate and fill the mould with the mixture. Pop it in the fridge to set.

Once it is set, drizzle with more white chocolate and fill with mini eggs !

There you go ....a giant mini egg nest. Yummy !




Slice it up and share it with loved ones or keep it all to yourself !

Lemon Meringue Mess

SO, as I was carving out the little insides of the cupcakes I made the other day and I had a little brainwave on how to use them up without wasting them. (after having eaten one or two).

I got a really cute little glass sundae dish the other day and have been waiting for the perfect opportunity to try it out.

This was it.

I simply layered up the little pieces of cake, with dollops of lemon curd and the meringue mixture.

Then finished it off with some pipped meringue and I then popped it under the grill for a few minutes to slightly brown the top.

Then - I sprinkled it with a little gold dust to finish it off !



A scrummy lemon meringue mess - or a cupcake in a glass - enjoy xxx

Spring Bucket List

Hi lovelies,

So, Spring is well and truly upon us.

We went out for a lovely walk last night as it was still light when Si got in from work and it was just so lovely. So warm and fresh, I just love it.

Lemon Meringue Kisses Cupcakes

These are the exact same cupcakes as my post I shared yesterday but I had a request to try a different topping - so this is what I did...

I hollowed out a little of the centre and dropped in a little lemon curd, then I added a dollop of the meringue filling on top.

I then made a lemon cream cheese frosting (from Peggys book) and spread this on the top of the cupcake, in a kind of rustic fashion.


I then made some meringue kisses for a little added crunch on the top - this is also one of Peggys recipes which you can find here.


I added some lemon juice to the mixture, just a touch and some lemon rind and grated some over once I had piped them. I didn't have any food colouring, but I quite likes these little ones white.

OOh how cute do they look...


They are not the most perfectly iced cupcakes but believe me, when you bite in to one - you won't care what it looks like. These are SO delicious. 

The flavour is intense, yet subtle and with the added creaminess of the frosting and the crunch of the meringue kiss, it's just so delicious.


Here they are all in a row, pretty much the order I ate them in !

(I'm kidding, they are too sweet for that, one hits the spot perfectly!)

Peggy Porschen Cupcakes - Book Review

I am huge fan of Peggy Porschen which you may already know if you read my review a while ago so I was super excited to get a copy of her new Cupcake book for Christmas.

It is such a cute size and a perfect edition to my growing collection. It's quite small, only about 6" x 6".

The book is so beautiful and really easy to follow with simple instructions for really delicious looking cupcakes (and tasting - but I will get on to that shortly).

There are so many delicious flavours to choose from and what I love about this book is it does include a few complex steps, like making a sugar glaze for example, but the instructions are so easy to follow that you will feel like a cupcake queen making them - and they will turn out perfectly fluffy!

I knew as soon as I started flicking through the book that I wanted to try the lemon meringue ones, I absolutely LOVE lemon meringue pie and so does Si so I was really excited to give them a go !

I had no idea JUST how delicious these would be ! .... I thought I would share a few pics with you to show you how they turned out !



I got these gorgeous yellow and white striped cases from Iced Jems and they are really easy to use and they don't get all greasy or floppy! 


Here they are ready to go in the oven ! 


Perfect.


Then for the fun bit - the meringue ! 


Absolutely delicious !! I wish you could taste over a blog as you would all be so super happy right now with just how yummy these are !



I really recommend this gorgeous Peggy Porschen book if you don't already have it - I am so excited about trying my next flavour...
