The Great British Bake Off - Tiramisu

Well that was a melt down last night wasn't it ? Firstly - I just want to ask something, did anyone else think it totally unfair that Iains Ice Cream was 'left' out of the freezer without him knowing ?

Anyway - another great technical challenge, I loved that Martha won ! (She's my fave).

Here are some gorgeous slightly different takes on a Tiramisu for you to try... there's even a healthy one in there ! Enjoy ! x

Superseeds - Punch Foods

Look at these mighty little tubs standing like soldiers of good health and nutrition ....

Ha ha, so maybe I got a little to excited but that's how I felt when these arrived. Like silver bullets of energy.
I first discovered these via Deliciously Ella and was on the look out for healthy snacks and I absolutely love the packaging of these. They are a decent size too. Standing at approx. 15cm tall they are perfect for your bag for on the go and these would be so ideal for travelling. 

The fist thing I discovered about these is that they are all so delicious just on they're own. So they make a perfect snack. You could also decant them for lunch boxes if you do bento style. 

BUT my favourite thing to do with them at the moment is have them with yogurt and fruit for breakfast. I always struggle with having something like fruit for breakfast as I crave a crunch first thing, so these have made it possible and given me the most delicious start to my day ! 

I LOVE the raw cocoa boost (I would as I love chocolate) so I run out of these and have quickly ordered more. 

I have them with Banana & Chocolate coconut yogurt like here:

And here with Vanilla coconut yogurt and strawberries...

Healthy Rolos

Yep, you heard me right - healthy rolos.

And I have to say - these might even be more yummy than the shop bought ones. They are certainly sweeter which means I can enjoy just two at a time and have a super sweet sugar hit rather than eat the whole packet of the shop bought ones and feel a slump afterwards and no real satisfaction. In fact writing this makes me realise just how much nicer they are !

So, I thought I would share with you how SUPER EASY these are to make too ! They are kinda sticky and messy but that adds to the fun !

So here's what you'll need to make 12:

4 Medjool dates
1 dessert spoon almond butter
1 1/2 dessert spoon rice syrup

1 dessert spoon coconut oil
1 1/2 (or 2) dessert spoon rice syrup
1 dessert spoon cacao powder

I know to some these might look like strange ingredients, but you can get the almond butter in most supermarkets now, Waitrose sell coconut oil and the others can be found in health shops or online.

So start by making the 'toffee'. I recommend using the So Organic Medjool dates from Sainsburys as they are big and juicy and really soft.

Add the dates to the mixer and add the almond butter and mix. I have to add, I had the idea for these because I love eating a spoonful of almond butter inside a date so I wondered what would happen if I mixed them together !

Then just add the rice sryup and blend until it all gathers in to a sticky ball like dough. You might have to scrape some of the sides down and add to the mixture.

This IS where it gets sticky. But thats why they are so delicious and chewy, so bear with it. You might want to keep washing your hands !

So take the mixture and taking small bits off, roll them in to little balls and put them on a plate or dish that you can pop in the freezer.

They don't have to be perfect.

Once you have all your little balls, pop them in the freezer for about half an hour.

When these are nearly ready to come out you can make your chocolate. I used my kitchen aid here, so use a mixer or whisk if you can but it works with a wooden spoon too !

Mix together the coconut oil (softened or melted), rice syrup & cacao powder until a silky smooth chocolate forms. Start with a little of the rice syrup and add more if needed to make it smooth.

This will also be a little sticky, so it's best to do this right before you take them out the freezer to coat.

Using a fork, dip the balls in to the chocolate and drip off any excess by hitting the fork against the side of the bowl.

You might need to use another fork to push them off on to your board or plate to set. I did say they get a bit sticky !

So once you have coated all the little rolos you can leave them exactly as they are or swipe your fork through the top to give them a chocolate box chocolate effect. I even tried re creating the circle of the rolo by using the end of a piping nozzle. Not sure it quite had the effect I was going for though.

In terms of presentation, these could do with a little more work BUT they taste so delicious I don't mind !

The Great British Bake Off - Cherry Cake

So, did everyone love the first Great British Bake off last night?

If my Instagram followers are anything to go by I am going to guess yes !!

The excitement around this show is awesome, I love that everyone bakes or plans something yummy to eat while watching it - it make me hungry just watching it!

So I thought I would share a few favourite slightly different Cherry Cakes following on from last nights technical challenge, in case you fancied giving something a go yourself !

Boomf - Eating my marshmallow face!

For those of you who didn't know - you can now have your Instagram pictures printed on to marshmallows. Yes, edible ones, so you can eat your photos. Pretty awesome hey. I absolutely LOVE this idea, what a great present for that Instagram fan in your life, it's such a quirky gift and makes for so much enjoyment. You can also use your Facebook photos or even upload them from your desktop ! I went for Instagram this time...

From the moment I placed my order I was excited. Having to choose just 9 images was pretty tough though, as I currently have about 1500 to choose from, but I made my choice, a little selection of some floral ones, some happy memories and a couple of my face, just because I thought it would be fun to eat my face!

The order process is SO easy, you just log in with your Instagram account and select the images you want to use. If you want to change your mind you can as you preview your box before ordering, just to check the colours all compliment each other of course !

I got my dispatch email the same day and they were delivered the next day !! Amazing. They say it can take up to 2 - 3 days in the UK, a week for Europe & 2 - 3 weeks for the rest of the world!

So my lovely box arrived in shiny silver wrapping... I was so excited to open them up ! Just another side note, they fit through the letterbox which is amazing as you don't need to nip to the post office to collect if you are out ! Perfect sizing Boomf!

So here's the lovely box..

Inside the box it reads... 

OOh I will thank you Boomf !Look how cute and tasty you have made my pictures....Just to fill you in incase you are wondering, starting from the top left, thats my sister and I, then a pretty pink smoothie and my lovely peonies, Si & I , my blog image, some gorgeous pink roses, sharing an ice cream with some of my faves, my parents, a little hello and a pretty flower arrangement I made. A pretty selection don't you think ?

So they look pretty all together, but what do they look like close up... oh hello :) The quality of the print is pretty amazing ! I absolutely love them ! Too good to eat right ?..... or maybe not !

OOh they DEFINITELY pass the taste test. So fluffy and yummy and soft. Yes, an absolutely delicious vanilla marshmallow.

Now for a photo one... I had some help in trying out this one... this is one of my favourite photos of us so it was only fitting he got to try it.... 

He was only too happy to oblige - but thought it appropriate to eat me first for some reason! ... 

Look how happy he is with himself.. 

I will definitely be buying more of these in the future, I have so many ideas - how great would they be as table 'name' settings for the Christmas table, everyone gets their own photo, or for a 1st birthday party, get a whole load printed with pictures of their 1st year, how sweet would that be. The opportunities are endless. 

What's really awesome too is you can print using a followers Instagram account - so if you wanted to do them as a present, you can sneakily do this without them knowing - how good is that !! 

Another great thing about these is, I haven't yet got around to printing any of my Instagram photos, but in the box you get a sheet of your images - I guess they test the colours first and include it to show you what you've chosen BUT I had a sneaky idea to re use this and make them in to stickers or magnets for the fridge ! 

Just cut them out - you could laminate if you wanted to, glue little magnet dots on the back or even just a bit of blu tak ! And there you have it - a little extra gift I wasn't expecting but can treasure forever!
