But... a lot healthier.
So what you will need to make these is:
3 Medjool Dates
1 tbsp Almond Butter
1- 2 tbsp Rice Syrup
1/2 tsp Salt (I use pink himalayan salt) or more to your taste.
Gluten free crispy rice (not puffs as they will go soggy)
3 tbsp Almond Butter
6 tbsp Rice Syrup
Make your own raw chocolate or I just melted Green & Blacks for this...
Start by making the salted caramel filling - add the dates, salt, almond butter & rice syrup in to the blender and blend until it all 'clumps' together.
The mixture will be extra sticky so add it to chopping board covered in baking paper and using a teaspoon and a knife to scrape it off, make little 'dollops' like below. Sorry, I know it's not the prettiest photo.
Then pop them in the freezer to harden up a little. 10 - 15 minutes should do it. Once they are out you will be able to roll them in to little balls.
Then to make your crispy filling. Start by slowly melting the almond butter & rice syrup together and once it's all blended in, mix in the crispy pieces. Just as you did when you make chocolate crispy cakes, do a little at a time to make sure it all gets coated.
Once it's all mixed in, get two dessert spoons (it's too sticky to use your hands) and take a little bit, pop a caramel centre ball in and then add some on another spoon and 'spoon' them together. Making them in to a bombe shape like below. Be patient as it's VERY sticky !
Then melt and temper your dark chocolate. Or just melt like me if you are going to eat them quickly.
Pop the melted chocolate in to a small dish so it's nice and easy to dip them in using a fork so you can spin it round and drip of any excess.
Pop them on some baking paper to dry. I set mine in the freezer as I was impatient !
Once set - DEVOUR. This is a mini one I made.... yummy.
And one of the bigger ones... these are seriously SO good.
Let me know if you make these AND if you don't want all the faff of getting them in to balls - just lay the mixture out in a dish, push the caramel balls spread out in to the mixture and then cut in to squares when it's set and you make them in to bars instead,
